There has been a butcher shop on our site at East Street, South Molton in the heart of Devon for circa 100 years. It was over 25 years ago that John and Val May purchased the business (June 2018 marked the 25th Anniversay), John having worked there 10 years prior. From its humble beginnings a century ago and particularly since their involvement, the shop has seen some monumental changes.
Whilst retaining all the craft of the time honed skill of the traditional butcher, the premises now boasts a state of the art, future proof and 5 star hygiene rated facility, incorporating spacious chillers large enough to maintain a turn around of beef carcasses that are not processed until they are a minimum of 28 day dry aged. A modern cutting room allowing 4 skilled butchers the space to prepare the beef, pork and lamb for the retail shop and catering customers alike. A processing room for the production of our flavour range of award winning sausages, burgers and it is from here that we produce our dry cured bacon which goes onto another process for smoking in our Applewood smoker. Our newly refurbished and equipped kitchen is used for the production of our own pies, pasties, sausage rolls, cooked hams, beef and turkey and much more.
Notwithstanding the introduction of our 21st century facilities, John has never lost sight of the traditional values and methods of the noble art of butchery. John is in fact held in high regard within the trade in the West Country and it is with this renown he is often asked to judge at local fat-stock shows and the like.
