Dating from the time of Napoleon, Chateaubriand is not traditionally a cut of beef but a recipe for fillet (tenderloin) of beef.  However, the name has been adopted in modern butchery to refer to the thickest part of the fillet. Our Chateaubriand are from selected 28 day dry-aged West country beef and are trimmed to the highest standard.  A 750-800g Chateaubriand will serve 5-6 people.
