A very underrated and reasonably inexpensive boneless cut, our West Country lamb fillets are extremely versatile. Stews, curries, roasts and grills. You name it, the lamb fillet fits the bill. If pink lamb is your thing, then new seasons West Country spring lamb will be the most tender. Other times of the year it may need slower cooking and therefore be more suitable for stews, curries and casseroles.
